Johnson and Wales teaches culinary arts, and it's a full university. There may be others. You can use college search sites like the Princeton Review website, or www.collegeboard.com, to find complete lists of all unis that offer this major. At collegeboard.com, you can actually specify: 4 year college/culinary arts major/men's track team (or women's), and get a list like this one:

The trick is to determine how you're defining "very cold." For some people, anything a little frost is very cold; to me, I won't put on a coat for anything above 20F. So this is a list of colleges that you may consider "very cold," but I'll leave it up to you to decide what counts. :) You'll probably want to visit http://www.culinaryed.com/ to sort geographically yourself at some point.

There's no official list of these, obviously, so this list won't be complete, but here are some good places to start:

- Atlantic Culinary Academy (Dover, New Hampshire) -- I believe they are closing, however, so you'll need to check
- The Art Institute of Vancouver (British Columbia)
- The Art Institute of Michigan (Novi)
- The Art Institute of Ohio (Mason)
- The Art Institute of Pittsburgh (Pennsylvania)
- The Art Institute of Salt Lake City (Draper, Utah)
- Cambridge School of Culinary Arts (Massachusetts)
- Champlain College (Burlington, Vermont)
- Clemens College (Suffield, Connecticut)
- Connecticut Culinary Institute (Hartford, Connecticut)
- Cooking and Hospitality Institute of Chicago (Illinois)
- Culinary Institute of America (Hyde Park, New York)
- Culinary School of the Rockies (Boulder, Colorado)
- Eastern Maine Community College (Bangor, Maine) -- has dorms, so I'm including it
- Johnson State College (Johnson, Vermont)
- Kendall College (Chicago, Illinois)
- Le Cordon Bleu College of Culinary Arts (Cambridge, Massachusetts; Chicago, Illinois; Mendota Heights, Minnesota; Ottawa, Ontario; Pittsburgh, Pennsylvania)
- Manchester Community College (Connecticut) -- no dorms, but consistently wins or places in national competitions
- Mitchell Technical Institute (South Dakota)
- New England Culinary Institute (Montpelier, Vermont) -- this came to mind first for me
- Pennsylvania Culinary Institute (Pittsburgh)

You will, of course, need to sort through that to account for reputations, rankings, personal fit for you, specialty areas, and the rest. But ranked on location alone, these would be some places to start. :)

Also, I'm not listing large public universities or otherwise "notable" ones (like North Dakota State University or Cornell University) that happen to have strong culinary programs because I'm under the impression that you are looking for culinary-specific institutions. I did, however, include a couple community colleges simply because they are so well known for their culinary programs.

That's great that you already have a career goal :) That program that you'd mentioned seems to be operated by the county which means that it's non-profit entity which 'is a good thing' (Martha Stewart who does a lot of cooking and creative projects on television used to use that phrase ;)

If you're going to wait until after finishing high school before entering a culinary program, please forgo those private overpriced for-profit tech schools (such as the 'art institute') and consider the more affordable county vo-tech school or community college as long as the program is accredited within the industry. Since you seem to have a passion for culinary, how about considering volunteering (with your friend or parent) at a 'soup kitchen' helping to prepare meals such as through your local place of worship or non-profit agency for those that are homeless. The best is Le Cordon Bleu which has many locations in the US. Make sure that baking and pastry (patisserie) is offered at the location where you will attend. See www.chefs.edu
