Different people have different learning styles, so what is 'hard' for one person may be relatively easy for another. You'll probably find some things covered which you already learned ages ago, and other things expected of you which you know nothing about.Nobody can tell you whether you will do well. If you're about to start on GCSE courses, then you'll have two years before the exams, so that's plenty of time to learn all you need to learn, and develop good study techniques. UK schooling is pretty different from US style schooling, but I don't know how Canadian schooling compares.
For instance, in the UK pre-algebra starts from about age six or seven, and algebra is learned alongside arithmetic, geometry, and so on, right through the school years. Whereas in the US they seem to introduce algebra all in one year, around 9th grade, including the very easy bits, but going on to quite advanced work. If you haven't touched on algebra at all, you may find yourself a bit lost in maths for a while, but equally there may be other parts of maths that are covered in the GCSE years which you learned at elementary school in Canada. If you've learned French in Canada, it will probably be at a much higher level than British school French.
You should be able to drop some subjects when you choose your GCSEs (though not maths or English), and concentrate on the ones that interest you most. The best thing to do is to start with a good attitude, determined that you will learn as much as you can and do well in the exams. Nobody will mind if you ask questions in class, or ask to talk to the teacher afterwards if something doesn't make sense to you.
I hope it works out well for you. Remember that nobody has to take loads of GCSEs, and that home education is a fully legal option in the UK if you find the school really difficult to cope with.

Boys attended "grammar" schools to learn Latin. You can't find anything, because there isn't anything to find. There were no formal schools as you think of them. Boys, whose parents could afford it, might get together to hire a teacher to come to a particular village to teach. This male teacher was usually a churchman without a parish - who would teach until a parish became available.Boys and girls learned to read and write English at home. (Why would pay someone to teach you your own language?) Higher education was church and male based. A boy of 12 or 13 could enter a school such as Eton.
