To be a teacher, you'd need to get your degree in teaching.

I don't know about Texas specifically, but here in VA where I work, you don't need to be a certified teacher to coach sports. However, the schools try to find a teacher to take the coaching jobs. If they absolutely can't find one, they will hire someone from the community.

I haven't heard of needing college courses to coach (though you'd probably need to take a first aid course). They do want teachers who have played the sport in college or at least for a few years in high school and are knowledgeable about it.

That is the #1 sport by far in Texas and they are loaded with great players as well as teams. It's a huge state obviously so there are a lot of players but it's impressive the amount of talent they have because the University of Texas which is a top 5 Program doesn't have to leave the state to recruit at a high level. Here is a stat, right now the ESPN150 which if you don't know has the 150 top high school players in the country according to ESPN has 22 players out of the 150 from the state of Texas. Texas also has the #1 team in the country right now in the USA Today Super 25.
