Authorware http://www.adobe.com/products/authorware… : It's an AICC-certified program used to create tutorials, manuals, etc. with full-motion screen capture, narration, etc.

Captivate http://www.adobe.com/products/captivate/ : Sort of like Authorware, but more specifically tailored to demonstrating software.

Breeze http://www.adobe.com/products/breeze/ : It's really a conferencing software, but can be used as a training tool.
