I would have them write an essay first. You provide the title. Don't specify length. That will help guide you regarding where each persons skills are (what level they're on). Based on that, what is the common denominator between them, besides not knowing English well? Structure a plan around individual topics to cover. You can find books at the bookstore or go on Amazon.com and find beginner ESL books. I like the real-time suggestion by sleepwalker. It is impossible to do something like that when you have a class full like I do. But also, a great esl website that you can check out for some ideas is www.eslcafe.com it has level appropriate activities to help teachers and students and a forum for both teachers and students if you have a question. You can get feedback from teachers who actually do this stuff everyday. Ask a local restaurant if they have any old menus that you can have. I did that and I have menus from Olive Garden. That makes it easy to do roleplay. Teach the vocabulary first. Give her roles where she has to do most of the talking. If you are doing more talking, you really aren't teaching. I would check to see if there are any ESL workshops in your area. That would be helpful to you in order to get a refresher and it is always good to go to workshops because you gain new ideas and techniques that you can tailor into your own teaching style. You can also bounce off ideas with other teachers in your field.Beginner's are the hardest group to teach, but if you are a patient person, this level is the most rewarding! Try to discover what and where the facilities are in the Spa resort.See if you can get a layout plan of the Spa resort and even better if each facility is shown of the plan.
If not, make up cardboard names with the information printed on each piece- Hair stylist, Coffee lounge, Information desk, Putting green and so on and place these on the plan.
If you have access to a whiteboard then you could mount the plan on the board and work from that.
You would need to consider what questions visitors might want answered or what directions they may ask.
Where is . . .
How do I get to . . .
When will the coffee lounge open/close?
How do I get to use the putting green/play tennis?
Must I book the tennis court?
What and When and Where and How and Why and Who? Then you compile possible answers.
