have a pot luck and randomly assign an ethnic group to each person, also, have your students each find 3-5 ethnic jokes, and have them tell them in class and then discuss why they are funny, true or hurtful, I did both of these assignments and the jokes were not too easy to tell with the ethnic group sitting in the room. Some laughs, better understanding.
