I would go online and look at sample lesson plans. How would i do a lesson on Fire safty?

Depending on the grade depends on what you do.

You want to start the lesson with some sort of instruction. I might read a book related to the topic or if it is older kids i would give a hand out and let them read it. Then we would have a discussion about fire safety and how a fire drill helps keep us safe and why it is important. Then if it was younger kids I would have them demonstrate stop drop and roll for me, giving each child a turn to demonstrate what we have learned, or if it was a large class I might have two or three do it. It would seem kind of silly to have them practice lining up because they had already do it earlier in the day, but it is also on option so that they get in the habit of droping what they are doing. Middle ages I would have a work sheet where they would circle and X pictures of things they should and shouldn't do in a fire. If it is older kids I might have them write out an evacuation plan for their house or something similar. Then I would assess what they did for understanding.

a generic lesson would be Instruction, guided practice, individual practice, assessment. Instruction is me talking or in the fire safty example me reading a story about fire safty. Guided practice involves the class as a group so with the fire drill it would be the class discussion. Also having the children preform stop drop and roll as a group. Individual instruction is an activity they do on their own, for younger kids it would be demonstrating they understand stop drop and roll individually, middle its the work sheet, older its the evacuation plan. and then assessment, I would assess if they showed comprehension or not based on their independant practice.

Many lesson plans include a learning objective, materials list, grade level, stuff like that. Google search Lesson Plan Format to get some ideas.

Remember when writing your lesson plan that someone should be able to read it and be able to teach the same lesson. I'm not sure why you didn't learn lesson plans in school I had to write a lot. I don't think you need a class on that, just read alot of examples.

Your best bet is to go to sitesforteachers.com (I think that's the right way). It lists 200 or so web sites, a lot of them are free. I also use learningpage.com. It is free and would work well with your lower level kiddos - stops at the 3rd grade level.

What age group?

I like doing activities that are fun and interactive, such as music & cooking, each having its own learning objective. Craft activities are fun too and can have a learning objective.

Remember keep the instructions simple and easy to follow.

You said you can teach them any subject.
Why not cooking a meal from scratch, starting with looking at recipe books and deciding what they would like to cook.
They then have to help make a shopping list, and then buy the ingredients, and a make list of equipment needed to make the desired meal.
Preparation;
Wash hands
Get equipment out that is needed
Weigh measure ingredients
Cook according to recipe
Clean up - any equipment used, while meal is being cooked
Setting table, sit down to eat and enjoy their meal
Do dishes and put away

Each student will need to be given a set job, so no one is standing around, as I said earlier each step must be simple and easy to understand.

Pasta such lasagna and salad is always a good meal to prepare, one small group can prepare the lasagna the other the salad.

The learning objectives are deciding on a meal, making a grocery list, buying the ingredients, hygiene procedures (washing hands), cooking the meal and cleaning up after themselves, all part of independence living skills.

do a question and answer time. i know for sure that upcoming freshmen have a LOT of questions about high school, so this would be your time to answer their questions. it could last all night if they get very involved.
