a) If one hour is set in concrete, then make it one hour, otherwise,I'd go 45 minutes breaking it into 3 15 minutes practices
b) You might want to vary the 3 motor skills so that you are resting a muscular group from say, skill 1 to skill 3. That might be the best way to schedule that.
c) I would give feedback during each skill and after the hour overall. State what the student did well and show techniques for improvement.

This is not a crazy idea... It is a GREAT IDEA!
Your "thinking" is on the right track, only the "learning curve" is no near so difficult. Sailing is fun and easy to learn. And crossing an ocean, sailing off to Paradise (and even on around the world) is within your reach... Today, common sense, and safety come first - and with all the technology afforded to today's sailors, crossing the ocean is little more then pointing your ship in the right direction, setting your GPS, Way-points, and autopilot or wind-vane, and not hitting anything for a couple weeks.
Below, it a GREAT site with all the information you need to get you started, get you there, and back again safely... even on a very frugal budget.
Your best (and only advice) should come from people who have actually done it. Furthermore, it doesn't take years, or even months to get the training & experience you need to do it safely - it only takes 6 - 8 weeks (assuming of course, you are commited and dedicated to it).

Now, this info comes from a 62 year old sailor... and based on my experience, ALL the "nay-sayers" are people that have never done it. Pay them no mind.

Its Always practice.Play for accuracy and speed will follow. Learn guitar theory. Not just music theory. Its important to understand that the guitar is constructed and tuned to fourths and a third. Get out of the box. Scales are first learned in a box pattern were your hand doesn't move much up and down the fret board. Find your scales up and down a single string and move across from Low E to High on your fourths. Fourths Fourths Fourths. That's the relationship of the first four strings. In-between b and g is a third. learn the major scale: two whole steps, one half, three whole steps, one half. (steps are equal to fret's) Learn the pattern on one string then cross over to the next string on the fourth. Start the pattern in different places and you get a greater freedom of movement. Understand fourths. This will set you free. Stretch your fingers and finally find Richard Lloyd on the web. I learned all this off of his writings and my experience with its use. Ive been playing for 23 years. Good luck. O yeah and most important play what you want. If you keep looking you'll find an exercise that you want to learn and a song that makes you hungry for more. Always play what you want.

You can't get REALLY good fast, it takes a long time. You are obviously very talented though, so keep learning as much as you can. Theory is very important actually, because it helps you understand what you are really doing and enables you to create from what you already know instead of just playing what someone else has already written.
