You should ask a teacher from last year. One who knows you. You can have a different person do the community service part and send two letters if you like.

On your country selection, watch out for language requirements -- some have them, some don't and that will make a difference in your choices. Germany is great -- no language requirement and it's a wonderful country. I also love Switzerland, but if you want the French part, you need two years of high school French first.

That might be pretty tough to get a recommendation letter in short order. People tend to give a recommendation letter to someone who they know or has volunteered for their organization for a while. However, it might be possible. Check with the United Way, local churches, civic organizations, soup kitchens, Special Olympics, and the American Red Cross because they need volunteers on a regular basis. Good luck!

Usually you talk about her as a person, and how she would fit into the school she's applying for. You could talk about how you know her, her talents and acheivements, etc. It's basically a letter from another point of view telling the school why she'd be perfect and what she can bring to the table.

Try to not make everything sound like BS though, they can tell. Lol.

No family members. Of course your family is going to say good things, if I were a committee, I woudln't except any letters that are related to you by blood or marriage.

Choose some one else that knows and has some professionalism, like a preacher, school counselor, maybe a friend of the family who is also in the business world like a manager.

Just tell him the truth. Presumably, your coach is going to find out that you've transferred when you're not there anymore. If you're so worried about your coach finding out, you can also ask your professor not to say anything to your coach about transferring.
