The Erasmus program if you're coming from an EU country. You can study pretty much whatever you want, I mean you can continue with your major. You also get Greek as a second language classes.
Whether you're from an EU country or from the US you can go through the Study-Abroad Advisor at your home University.

If you are not enrolled in a university and just want to come to Greece for a year to learn language or archeology or history, you can go through the Ministry of the Interior (also Foreign Ministry & Ministry of Education) - they have ALOT of programs (some of them you can even get PAID!). Contact the Greece consulate in you area (be persistant because the employees at the consulate are not always informed about these programs - it depends on whether or not they have experience). Also Check with the Onassis Insitute & the Rhodes Scholarship Fund (among others).
Also you can go this route if you are a graduate student or don't want to go through Erasmus.

The study abroad programs offered (in america) to go to greece don't expect you to speak Greek. and the students who go are just fine.

Oh yes, I think 1000 euros are just fine (as long as you aren't paying for a hotel room, of course). Most students in Athens make it with about 800 euros every month (300-400 for flat rent and 100 for electricity-phone bills) IF they don't go shopping like crazy of course!! haha!

If you take 1000 euros you will be comfortable enough to also go out some nights, visit some museums, etc.

1. Greek Bible College in Athens, Alpha Program - do a search, it's the first link that comes up

2. University of Athens, though they teach in modern Greek

3. Search for American universities in Greece, you'll find some.
