If you have a passion to teach, go for it. No one can predict the future of anything, anyway. It looks like you want to teach science. That and math are most likely to continue to grow, and there is always someone retiring, so it is going to be luck and good referrals that will make the difference.

While you look for a teaching job, you may end up working as a lab tech or processing clients for social services. Any of those jobs will be good training for you, when you do nab that teaching job.

Follow your passion, but leave yourself open for change.

Ok, I havent completed a lateral entry (was about to, but chose another route in another state). But I am a licensed teacher, and also have parents in NC who are teachers/educators (Im here because we all have break)- and heres what I can say (and its not exactly what you may be looking for, but its just my thoughts, more than what you may get if you call a university etc and ask--- theyll probably be useless just to get you to come theyll say anything):

NC isnt that well off right now, it used to be begging for teachers, but there letting teachers go who only have 1-2 years experience. I think that you should be ok, but if your not flexible on where to go, you wont be. Charlotte Mecklenburg schools usually hire, but havent been lately. The Wake County (Raleigh) schools, however, usually have spots open as does the Greensboro schools. NC has a website with all teaching jobs, I suggest looking through that. Now is a good time to do so, because if there are jobs right now in that county, chances are those are the positions and districts needing later entries (they cant get a teacher during the start of the year, so theyd take anyone).

You should go for the research job but consider what you enjoy doing and what will make you happy from day to day, it sounds like you want to teach so go out and work for a few years then go back for your masters.

When they say experience in a basic lab position they will be looking to see if you did any extra lab work at school. This can be as a paid work study for the school, in a lab, or as a credited research class where you do a project under the guidance of a graduate student. It depends on what your school offers and how aggressive you are in seeking this kind of opportunity.
Some schools offer a graduate level/ upper level independent research credit. This is with permission from the lab PI and what ever graduate student that would be supervising the work. Usually this is doing some basic work on the grad student's project. You might get to do tissue culture, purify protein, or run gels and transfer to blots. What ever they let you learn is worth it because having this is what employers are looking for in the best of entry level applicants. It means you have done more than basic labs required with the class work.
If these options are not offered by your school try approaching the head of a lab doing work that interests you about an internship. Even if you must start out unpaid this could get you an entry into an area that excites you. You have demonstrated initiative and a real desire to work in the field far beyond just good grades in the class. If the offer is for a few trial weeks unpaid be sure there is a mutually agreed number unpaid not some open ended period.
I remember one person who got on as a tech while doing graduate studies. The lab work was with the advisor of those studies. The tech was trapped at an entry pay level until the studies where published at the completion of the program while those working as techs received annual pay increases. Be sure you know about all the details of any internship type of employment.
