start by showing them rhyming words like dog and bog, kat and mat, bug and rug, Etc.
then find some funny poems depending on their grade. i know an old lady who swallowed a fly is one of my favorites. then they can make their own poem. give a theme so its a little harder. if you want you can give out prizes like the most creative, funniest, longest, shortest, overall best,etc.

...if you are qualified to teach you should be able to come up with some activities of your own, not copy them out of a book.

Shall I presume your students are adults?

Many ways:
*Flash cards/picture cards and/or real items to teach vocabulary (I've a box for each theme "container (bol, glass, tin, cardbord box... with the name written on it) as some learners like to "touch" to memorise the vocabulary
*playing dominos (numbers)
*words dominos, to mach to make a sentence.(I make my owns with bit of cardboard from cereal box)
*role plays (and recording it to increase their confidance), and using cardboard plates with situation written on back.
*Bingo
*situation on video/dvd

st year of teaching was hard and scary for me too, but 5 years on now in further education and it become easier, as you can reuse your "tools" again and again

I recommend covering reading, then listening, and then speaking and writing. The reason is that for the integrated speaking and writing activities, students need to have good reading and listening skills. If the students will actually be taking the TOEFL before the course is over, you may want to give a brief overview of all the areas at the beginning so students have at least some knowledge before the test, and then go over them in detail in the order listed above. The guides tend to be pretty long, so I'd focus on just working through them while adding other materials as time permits.
