I'm going to be brutally honest here.

Spanish universities (for graduate level work) have terrible reputations here in the US. U Complutense de Madrid is particularly abysmal, and Sevilla is pretty bad.

In the US, the only field that regularly hires PhDs from Spain is Spanish. Even LAS pretty much stays clear.

On the other hand, ColMex (El Colegio de Mexico) has a superb reputation in LAS. ColMex has an excellent History track, but does not have a religious studies track. (Getting hired in the US in Religious Studies with a non-US degree is not exactly the most likely scenario,.anyway.)

If Religion (Religious Studies, Comparative Religion) is a central interest of yours, and if you have Spanish already, I would suggest you explore the possibility of admission to a terminal MA program in RS in the US. Every terminal MA in this field is considered a "feeder program" to top PhD programs. If you've had trouble getting admitted to one of the terminal MA programs, I would suggest taking a few courses at the undergraduate level before reapplying. Make sure to take one upper-level course in Method and Theory in the Study of Religion, and a couple in Latin American Religions (if that is your intended subspecialization).

The University of Salamanca (790 years old) is very popular place to study Spanish. Salamanca is a small town (160K) but one of the most famous Renaissance cities in all of Europe. The town square is beautiful and there are a lot of bars and clubs.
Salamanca is part of the "Castile and Leon" region of Spain. This is where the language originated as a regional dialect of Latin. The local dialect of Spanish is probably the oldest and purest form of Spanish in the world. My aunt and my cousin both studied here because they prefer to speak Castillian Spanish.
Salamanca has not yet been connected to Madrid by high speed passenger train. You'll have to settle on slow speed (2.5 hr) traditional trains. It's about 120 miles to Madrid.
